From a blueberry and white chocolate version to an ‘inside-out’ cheesecake bombe.

NOTHING SAYS SUMMER dessert quite like a cheesecake, the unofficial treat for the season of sunshine, low-maintenance dining and ripe fruit.

Tasty, moist and light (well, depending on the recipe you choose), most cheesecake recipes won’t keep you long in the kitchen either. Even better, it’s a dessert that can take a day or two in the fridge and still look perfect when you whip it out for your guests.

Tempted? Here are six of the best summer cheesecake recipes from around the foodie-friendly internet…

1. Donal Skehan’s Blueberry and White Chocolate Cheesecake: Sometimes chocolate desserts can seem too heavy in summer, but this recipe from Donal Skehan balances that chocolate hit with light and tangy summer flavours. He mixes plain cream cheese with mascarpone, a combo I adore.

2. Shane Smith’s Raspberry Cheesecake Brownie: Shane is head pastry chef in Overends restaurant in Airfield Estate, Dublin and this recipe of his is amazing. You could bake this in a rectangular tin and slice it into brownies, too.

3. Nigella Lawson’s Lemon Cheesecake: When I think of baking something for friends, I always go to the Domestic Goddess herself, Nigella Lawson. Her recipes have always proved to be fail-safe for me and I like her twists on classics. This lemon cheesecake is baked using a water bath for extra moistness.

4. Smitten Kitchen’s New York Cheesecake: New York Cheesecake is the original and best baked cheesecake recipe, and for mine I go direct from a New Yorker: US recipe blogger Deb Perelman. This recipe features cherries, which are luckily just coming into season. Deb uses graham crackers, a US favourite, but you can sub in digestive biscuits.

5. The Little Green Spoon’s Vegan Cheesecake: The mix of fresh summer strawberries and chocolate with the cashew and coconut in this cheesecake are divine. You don’t have to be a vegan to enjoy this cheesecake… Trust me!

6. Sharon Hearne Smith’s Peanut Butter Cheesecake Bombe: For something slightly more unconventional, try this ‘upside-down, inside-out’ bombe, with a dense peanut cheesecake centre.
