6 summer fruit desserts to drool over

We’ve got your all your fruit cravings covered.

ONE OF THE best things about summer is the absolute abundance of fruit.

And we’re going to go out on a limb here and say most people would be partial to a dessert every now and again.

So, we’ve combined the best of both worlds and have rounded up six of our favourite fruity summer desserts to get you salivating over and hopefully making this week.

1. Nectarine ice-cream

It’s not summer if there’s no ice-cream right? To kick things off right, here’s a recipe for a fruity peachy, orangey (what are nectarines, exactly?) ice-cream.

Now this ice-cream does call for a fancy-schmancy heating ice-cream maker (to make sure the eggs aren’t raw) so here’s a really easy three-ingredient, no-churn, clean-eating mango ice-cream recipe if you don’t have such fanciness lying around – and you could probably swap nectarines for mangos. Just sayin’.

2. Maple baked peaches

These maple-baked peaches topped with a crunchy maple pecan crumble are allegedly for breakfast – but we think they’d do very nicely as a scrumptious fruity dessert. Either way – breakfast for dessert or dessert for breakfast, it’s a win-win in our book.

3. Lemon and thyme cupcakes

Lemon and thyme are often used with roast chicken so coming across this lemon and thyme cupcake recipe one might be a little taken aback.

4. Brown butter white chocolate rhubarb blondies

Now there’s a mouthful of a name.

But once you get these blondies (a white chocolate version of a brownie) you won’t care what they’re called – and you may even forget your own name. 

5. Strawberry shortcake ice-cream

Yes, another ice-cream. But look at it. It’s strawberry shortcake.  How could you not?

You couldn’t.

6. Peach frangipane tart

It’s peachy almondy goodness and delicious served with a dollop of cream.

It’s easy to make and looks very impressive when you serve it at your next dinner party – or eat it straight out of the baking case, alone, with a spoon.
