'It's the tastiest fish dish ever': Nutritionist Amy shares her go-to breakfast, lunch and dinner

Amy Meegan takes us through a day on her plate.

EACH WEEK, WE ask a home cook about their favourite dishes to whip up for breakfast, lunch and dinner. From simple meals that you don’t need a recipe for, to dishes that take a little more time but are worth the wait.

Breakfast: Oats and seeds pancakes

Without a doubt, my favourite breakfast has to be pancakes, most specifically my oats and seeds pancakes. Although I’d love to have them everyday, I typically only have a chance to make them at the weekend, which I suppose makes them more special! The inclusion of the oats gives the pancakes a subtle nutty flavour and boosts the nutritional value, too.

Lunch: Creamy avocado pasta

You can ask my workmates, I am obsessed with avocado! That’s why this creamy avocado pasta is top of my lunch list. The creaminess of the avocado wraps around each pasta shape so that each mouthful is a party for the tastebuds.

Dinner: Spicy fish curry

This has quickly become my favourite dinner. I aim to eat fish at least once per week and the spices in this curry make for the tastiest fish dish ever! I like to serve this with a mix of boiled rice and quinoa. The quinoa adds a different dimension of taste and texture, as well as being a great source of plant-based protein.
