'I'm a fan of big flavours': 5 recipes from a Galway foodie who loves to travel

Ciara Daly’s food takes inspiration from Ghana, Australia and beyond.

EACH WEEK, WE ask a home cook about the dishes they’ve been whipping up of late. The kind of food you don’t need a recipe for, from quick snacks to empty-the-fridge dinners.

This week, freelance digital marketer and world traveler, Ciara Daly (@irisheats.ie), shares five dishes from her Galway kitchen. She brings her travels, and a few stints living abroad, home to her food.

After spending a number of months working as a teacher in Ghana in 2010, my love for cooking was really cemented. Hours of preparation would go into the food they were preparing, a lot of it being quite physical as everything needed to be prepared from scratch. Every dish, without fail though, would come out tasting amazing.

Ciara has a food blog where she shares all of her recipes, including those she has shared with us today. From miso mushroom pasta to lime and coconut mussels, here are Ciara’s flavourful five. 

1. Vegan buffalo wing tacos: Cauliflower wings have been doing the rounds on Instagram quite a bit of late and I’d had them on my list to try out for quite some time. They did not disappoint. They really hit the mark in terms of providing that same meaty texture you get from chicken. Served up in a warm tortilla with a deliciously creamy avocado dressing, they made for the perfect dinner time treat. Definitely a great recipe to whip out when you have some friends over! 

2. Spicy mushroom and sundried tomato pasta: The recipe uses miso, which is traditional Japanese seasoning produced by fermenting soybeans. Salty and savoury, miso is one of my favourite things to cook with and in this dish it it just adds such a beautiful depth of flavour that you can’t help going back for seconds, thirds AND fourths! 

3. BBQ pulled mushroom burger: Burgers are one of the greatest foods out there and with so many different variations to choose from, I never seem to get sick of them. I love tucking into this at home on the couch after a long week of work, with a nice side of homemade fries and some good old fashioned slaw.

4. Mussels in a chili, lime and coconut broth: A few years ago, there was absolutely no way you would ever be able to get me to eat fish. Now I am a total addict.Since converting to a seafood lover, I’ve put my own spin on my friend Julia’s recipe. Although it will never live up to her unbelievable standards, is nevertheless quite the tasty dish! 

5. Eggs Benedict: I did a stint living down under in Sydney, where breakfast is more of a way of life than just a meal. I always look forward to the weekend when there’s time to dawdle around the kitchen and put together something spectacular to accompany my coffee. For me, eggs Benedict has got to be a winner. Simple but spectacular!
