6 of the best... twists on the classic recipe for roast potatoes

The roasties with the mosties.

POTATOES: WHO DOESN’T love them? They’re the most comforting carb and a trusty staple in every household. In Ireland, the average household buys 125kg of potatoes annually, which is a lot of potatoes. We even have a National Potato Day to celebrate the humble spud – which in fact is next week, on October 5.

The “best” way to eat potatoes could be the cause of much debate, but it’s hard to argue that a roast spud isn’t up there. In most cases, the roast potato is a simple (and delicious) process involving only 2 or 3 ingredients, but since potatoes are well able to handle quite robust flavours, we thought we’d get inventive. So, shake things up for your next Sunday roast with these twists on the classic roastie!

1. Roast Potatoes with Bacon and Onions, from A Communal Table: Why not upgrade your regular roast potatoes with the addition of some crispy bacon and sweet onions. After all, bacon makes everything better, right?!

2. Slow Roasted Sweet Potatoes, from Smitten Kitchen: Slow cooking makes sweet potatoes taste even sweeter, and we think these would be worth the 150 minutes wait. Why not cook ahead and eat later, topped with some leftover chilli or tuna for a tasty and healthy lunch?

3. Rosemary Infused Roast Potatoes, from Healthy Living James: Rosemary and potatoes are a match made in food heaven. These most definitely deserve a spot at your next Sunday roast!

4. Indian Spiced Roast Potatoes, from the Flavour Quotient: Crunchy and crispy roast potatoes are taken to the next level with the fragrant Indian spices in this recipe. These would make the perfect accompaniment to some grilled fish.

5. Parmesan Roast Potatoes, from What’s Gaby Cooking: The addition of parmesan adds a nice layer of decadence to the traditional roast spud. Cheesy goodness combined with crispy roast potatoes? We’ve just stumbled across our new favourite food marriage!

6. Crispy Roast Potatoes, from Jamie Oliver: You can’t beat a classic roast potato, and with just a few ingredients, Jamie Oliver reckons his recipe contains the secret to the crispiest roastie you could make!

    I sat the leaving cert in 2004. Science in UCD was 290, now it’s 500. Such a difference.

    Just looking at those points, I’m still surprised that some Software courses are not that high. Computer Science in UL is 325?

    Computer Science in UCC is 340, now third lowest points. Above Arts and International development and food policy. In ’09 CS was 300.

    aine hyland claims that the raise in entry points for maths based courses will lead to a falling off in the failure rate on those courses (as students had previously found them too difficult)

    you get 25 extra for higher maths. the course requirement goes up by 25. so, you will obviously be far more able for the maths. 25 points extra and the resultant rise in entry requirements hve magically improved students ability to do maths?!!! irish solution etc

    Is it 25 bonus points for higher level maths no matter what result you get? Or is it 25 bonus points for an A1 and then dropping by five points each grade after that? That’s what it used to be in UL right?

    Seriously? With project maths? Are they having a laugh. They’re all going to fail first year if the course has a maths module that’s even remotely difficult. The engineering courses are going to see huge fail rates.

    Well the individual courses should really have a maths requirement to get into them if they are mathematically focused. That would prevent those that arent’ capable from taking them up.

    They do. But it’s no good if the maths course isn’t up to scratch. It’s wildly underestimating the students. It’s patronising and insulting and it’s a cheap copout to avoid hiring and training better maths teachers for secondary schools.

    Thankfully I had more than enough for my first choice in Trinity but sadly a lot of students were disappointed. For example one course went up by 115 points.
