A LIGHT AND fluffy traybake is the perfect all round sweet treat; whether it’s to whip up for unexpected guests, birthday cakes or a tea time treat.

The key to baking a good traybake, or any cake for that matter, is all in the science and any cake will only ever be as good as its recipe. One of the most important parts of baking happens in the oven, so always ensure the oven is at the correct temperature and whatever you do, do not get impatient and open the oven door half way through the cooking time.

This will seriously affect the end result and you could end up with a traybake as flat as a pancake, which will be no good to anyone!

One of the great things about traybakes is that they are very easy to dress up, and with just a bit of imagination, you can transform any traybake into something that looks very impressive. So, what are you waiting for? Its time to get baking because life is just too short not to eat cake!

1. Custard Cream Sponge Traybake, from Irish Baking Adventures: With a dollop of custard on top, this would be a delicious tea time treat. Although this recipe calls for custard creams, we think it would work well with almost any biscuit you have in the cupboard!

2. Carrot Cake Traybake, from What Jessica Baked Next: This easy traybake is packed full of fragrant spices and fresh orange zest with some walnuts for added crunch. Topped with cream cheese frosting, this is a real treat for carrot cake fans!

3. Vanilla Traybake, from Catriona Redmond: This all round crowd pleaser with a distinct vanilla flavour can be whipped up relatively quickly. This could be decorated and transformed into a delicious kids’ birthday cake with relatively little hassle!

4. Apple Traybake, from Cooking in Mammy’s Kitchen: This apple traybake would make the perfect afternoon treat to have with a cup of tea but equally nice with a dollop of cream or custard. Apples are in season at the moment too, so you’ve no excuse!

5. Blueberry and Lemon Traybake, from Mammasaurus: Lemon and blueberries are one of those classic flavour combinations that you just can’t beat! A nice light cake that makes a tasty and fresh alternative when you’re not craving ALL of the chocolate.

6. Vegan Chocolate Tiffin Traybake, from Sarah Sibley: This is one for when you are craving all of the chocolate, but with less of the guilt. This recipe uses no dairy or eggs – vegans, rejoice!
