'It's my take on a childhood classic': 5 all-time favourites from a keen Tipperary home cook

Darryn Loughnane has a penchant for spice.

EACH WEEK, WE ask a home cook about the dishes they’ve been whipping up of late. The kind of food you don’t need a recipe for, from quick snacks to empty-the-fridge dinners.

This week, Darryn Loughnane (@darrynsfood) shared with us the five dishes that he never bores of. 

“I eat with my eyes and then my mouth, so if my food doesn’t look appealing first I won’t really enjoy it,” says Tipperary native Darryn. “My cooking style is making flavoursome comforting foods that pack a punch and healthy mouthwatering desserts that kill your cravings. I can’t do bland or plain foods.”

From a quick and easy lunch to a twist on a childhood favourite, below are five of Darryn’s favourite dishes to make.

1. Eggs Florentine: I make this at least once a week. Although the bread base is bought, the rest is all prepped or made from scratch in my kitchen. This recipe contains paprika and chilli flakes so its warming and spicy – two of my favourite things! To make the hollandaise sauce I use Greek yogurt, lemon juice, egg yolks, mustard, salt and cayenne pepper.

2. Piri-piri egg wrap: This is a perfect carb-free lunch idea that’s loaded with flavour  and will keep you going throughout the day. To make the wrap, whisk two eggs together, add your spices of choice and a tablespoon of quark and whisk again until smooth. Heat some oil in a frying pan, pour in the eggs and spread the mixture to the edges before leaving it to cook.

3. ‘Jammie Dodger’ French toast: This is a major hit at the weekends in my house. I use raspberry jam for the filling and add some toffee yogurt, berries and a teaspoon of allspice, cinnamon and nutmeg for extra flavour. It’s the perfect guilt-free meal to have on a Sunday morning.

4. Burger and mash with mushrooms and homemade pepper sauce: My favourite dish as a child was mince and mash or a burger and pepper sauce so this is my take on a childhood classic I loved and still love to this day. There’s nothing like the nostalgic feeling that I get every time I whip this up.

5. Spicy roast potatoes: Spice up your Sunday dinner with piri-piri roasties. I always make spices from natural ingredients so when I make my piri-piri chicken wrap, I keep any left over seasoning to add a kick to these.
