Donegal's getting a whiskey factory built on these stunning Gaeltacht cliffs

It’s a tourism combination made in heaven.

DONEGAL. CLIFFS. GAELTACHT. Wild Atlantic Way. Whiskey.

It’s a tourism combination made in heaven.

Donegal is getting its first whiskey distillery in 174 years; the Sliabh Liag Distillery at Carrick in Donegal.

…to be constructed on the slopes of the Sliabh Liag sea cliffs in the Donegal Gaeltacht.

The Sliabh Liags (or Slieve Leagues) are a pretty spectacular location:

While the distillery won’t exactly be clinging to the rock face, it looks like it will have some incredible views:

The distillery is still in the planning stages, but the people behind it, James Doherty and Margaret Cunningham have already launched their first whiskey called The Silkie.

If you build it…

I would imagine 95% of what’s produced will be for export.

Legally it takes three years and one day to produce a single malt Irish whiskey, so it will be quite some time until we see a genuine Sliabh Laig whiskey product instead of blended whiskey from elsewhere.
Dingle Distilleries set up a few years ago as part of the Porterhouse brewery group have been making excellent gin and vodka for the home & export market. They bottled their first cask of Irish whiskey just before Christmas and we will see Dingle whiskey become more prominent over the coming year or two. Definitely one to look out for if you have a taste for single malt Irish whiskey, at a price.

Is there any other small independent distilleries that actually operate where they claim to?

Very good. A lot seem to claim to be in places they’re not. Even larger distilleries….

Many are operating where they claim but provisionally source their whiskey from other distillers until their own product matures. It keeps capital flowing and gets the brand promoted.Teeling,Glendalough and Walsh distillery are currently doing this and have distilleries up and running.
I think this is fine as bottlers will work with the distillery on what they want and in a way end up with a distinct product. But I think the government should introduce laws requiring these companies to state where they are sourcing from on the bottle.Full transparency will only be good for Irish Whiskey’s reputation.
