'A good breakfast feeds the soul': 5 recent favourites from a health-conscious foodie

This week, Niamh Keogh shares some highlights from her kitchen table.

This week we caught up with foodie Niamh Keogh, whose healthy treats and inventive oat dishes will have you swooning all over her Instagram!

Turmeric Curried Oats: When it comes to Niamh’s favourite every day food, it has to be oats, she says. “Whether sweet or savoury they take minutes to prepare, are so inexpensive, fuel you for hours and taste amazing. Stereotypical oat recipes often overlook the fact that they can be enjoyed however which way you please, including in savoury dishes.”

A Winter Warming Fish Pie: “This sweet potato fish pie takes a little bit longer than my usual creations, but the end result is worth the wait. A nutritionally balanced dream packed full of protein, complex unrefined carbohydrates and healthy fats, it’s a winter warmer and great crowd pleaser!”

Sweet Potato Brownies: “Understanding food and how it fuels your body means you can prepare, or, if you need to, grab food on the go that won’t hinder your routines and goals. Preparation is key, but sometimes life takes over and with so much healthy options available these days, small bits of nutritional know how will allow you to make a smart decision on the spot. When I can prepare in advance, my sweet potato brownies are the perfect go-to sweet treat!”

Spanish Omelette: “My favourite meal of the day? Midweek, it would be lunch, I could eat notion-sey salads until the cows come home. But on the weekends, a good breakfast feeds the soul! A favourite of mine is a hearty Spanish omelette.” 

And her favourite sweet treat? “85% Dark chocolate smothered in crunchy peanut butter *salivating at the mouth* or, if all else fails, anything involving peanut butter!”
