'It's one thing I never get sick of': 5 speedy recipes from an all-round food-lover

Including healthy treats to satisfy your sweet tooth.

EACH WEEK, WE ask a home cook about the dishes they’ve been whipping up of late – from simple suppers to lavish lunches. 

This week, trainee solicitor Siún Clinch shared with us five speedy recipes that keep her going through her busy lifestyle. 

After discovering a passion for fitness, Dubliner Siún realised that she “needed more balance” in her life and turned to cooking healthy meals. 

“My cooking style is definitely not fancy,” she told TheJournal.ie. “I love to make really good, comforting food that can bring family or friends together after the day.” 

As for her favourite cuisine, Siún doesn’t have one: “I love pasta, steak, sweet food, salty food, spicy food – just food in general!”

From homemade pesto to almond crunch bars, here are five quick and easy meals that Siún (@thehealthyspoon.ie) turns to time and time again… 

1. Poached eggs with a twist: In my eyes there is little better than the simplicity of gooey poached eggs on some fresh toasted sourdough. I sometimes add grilled prosciutto for that extra bit of flavour.

2. Craving-busting bars: After years of experimenting with healthy treats, I have found the ultimate sweet treat to banish cravings! These little almond crunch bars are made with toasted almonds, oats, dates and honey and are topped with a layer of dark chocolate. The recipe is so quick and easy.

3. Spiced granola: I struggle with breakfasts mid-week so I love to have something that can be made in advance and has a good shelf life! This spiced granola with dark chocolate chips, goji berries and pistachios is absolute heaven to have with some yoghurt and fresh raspberries at my desk and is one recipe that I never get sick of.

4.  Speedy pesto: I am always trying to think of new ways to make that lunch box salad more interesting. I made this little pesto-esque topping while experimenting one day and it has become a fast favourite. Instead of the jarred stuff, chop up basil, garlic and pine nuts, add salt, pepper and olive oil. Dollop onto a raw chicken fillet and roast in the oven. Every time I have this in work I get asked for the recipe!

5. The ultimate toastie: For the days when a salad just won’t do, this toasted sandwich is the ultimate comfort food. I make it with fresh sourdough, Parma ham, Brie and relish and toast it old school in a frying pan with some butter.
