'Everything you need for brunch in one pan': 5 recent favourites from a gluten-free home cook

Including two tasty empty-the-fridge dinners.

EACH WEEK, WE ask a home cook about the dishes they’ve been whipping up of late. The kind of food you don’t need a recipe for, from quick snacks to empty-the-fridge dinners.

This week, Linda Timperley (@linda_glutenfreecook) shared her five current favourite dishes.

“I was tested for coeliac disease in 2010 and have followed a gluten-free diet since,” says Linda. “Eating out is certainly a challenge, but cooking at home has gotten easier thanks to the variety of products available now.”

Linda’s approach to home cooking is to work with what she has available, before stocking up again:

I like to cook with good quality, fresh ingredients when possible, but have also been known to empty the freezer and larder press to make a meal rather than go to the supermarket if I’m having a lazy day at home.

From an “empty the fridge casserole” to one-pan egg dish for brunch, below are five of Linda’s go-to dishes…

1. King prawns, shallots and chilli on gluten-free toast: This is a really quick and tasty light lunch. It takes just a few minutes on the pan and it’s done. I love the flavour of wild garlic and we’re lucky enough to live close to a forest where it grows in abundance, but the dish is incredibly tasty even without it.

2. Chicken, mushroom and asparagus risotto: Risotto is a great fridge-emptying meal that’s fast to make and easy to prepare. Sometimes I make it using leftovers such as chicken, others times it’s seafood, plus whatever vegetables I have in the fridge. Frozen prawns and peas are always handy to have in the freezer to add in too.

3. Thai seafood curry: If you’re a fan of mussels (we are!) then this is a great dinner recipes to try out. Sauté shallots, peppers or whatever veg you fancy, add red curry paste and coconut milk, cook off for a few minutes then throw in your mussels – being sure to discard any that don’t open when cooked. Chop garlic and coriander and mash into butter along with sea salt for the garlic bread.

4. One-pan eggy brunch: This is a lovely lazy weekend brunch. I make gluten-free croutons first, then add tomatoes and mushrooms to the pan followed by spinach and Parma ham. Finally crack in the eggs then add the croutons back to the pan. Finish under the grill. Everything you need for a delicious brunch in one pan!

5. Sausage and bean casserole: I think I have to include this as the ultimate ‘empty the fridge/cupboard’ meal. It takes minutes to prepare and just twenty or so minutes in the oven. Fry off lamb sausages (or pork if you prefer), onions, kale, cherry tomatoes, chillis and paprika. Add a carton of chickpeas, kidney beans, butter beans, tomato paste and passata and finish in the oven. A very hearty and filling dinner. I’ve also cooked similar with meatballs or a butterflied chicken on top.
