'I try to use seasonal fruit and vegetables': 5 recent dishes with a difference from a Cork home cook

Malwina Bernady loves making her own sourdough.

EACH WEEK, WE ask a home cook about the dishes they’ve been whipping up of late. The kind of food you don’t need a recipe for, from quick snacks to empty-the-fridge dinners.

This week, Malwina Bernady (@mykitchenheaven_) shared the five delicious dishes that she turns to time and time again.

“My cooking style is quick and easy with no waste,” says Malwina. “I cook everyday for my family and make sure I pick the fresh and right food.”

“I love to try new recipes but often come back to good old ones that I remember from my family home.”

From homemade sourdough to matcha mousse cakes, below are five of Malwina’s go-to dishes… 

1. Homemade sourdough: I absolutely adore breakfast, and baking my own sourdough has become my greatest passion. I bake almost every day for my family and friends. Sourdough is my canvas and I’m creating a piece of art on each slice every time. I try to use seasonal fruits and vegetables as much as possible. Chargrilled asparagus goes very well on toasted sourdough with scrambled eggs, mushrooms, chilli flakes and wild garlic.

2. Simple granola: Homemade granola is one of those things where, when you make it, you feel like a kitchen rock star. But in reality, it takes a handful of real food pantry staples which you mix up in five minutes, spread on a baking sheet and wait patiently while it bakes. That’s all. I like to reuse empty jars and fill them up with some yogurt, granola and fruits.

3. Mashed potato gnocchi: Using leftovers is the best way to create a new delicious meal. Yesterday’s mashed potatoes are today’s gnocchi with sage butter and Parmesan. Maybe they’re not perfectly shaped, but believe me, they are gorgeous.

4. Buttermilk pancakes: Who wouldn’t want delicious pancakes on a lazy Sunday morning? My recipe for apple buttermilk pancakes is an easy one that everyone will eat, and it’s a great classic pancake recipe to have on hand. These are golden brown on the outside and light and fluffy on the inside. Delicious.

5. Matcha mousse cakes: These matcha mousse cakes look pretty complicated to make, but they’re not at all. Matcha is so versatile and can be used in so many ways. You can drink it as a traditional hot tea, make it into a delicious latte, or use it in baking and cooking to add some flavour to your recipes. These have a light and airy texture, just like eating fluffy cream clouds, and the crunchy biscuit base gives extra texture to the dish.
