What you’ll need

125g unsalted butter

60g powdered sugar

1 pinch salt

180g plain flour

3 medium eggs

50ml lemon juice, freshly squeezed

What to do
Make your pastry
1. Dice 125g butter and knead together with flour, icing sugar, and salt.
2. Add one egg yolk to bind the mixture, and add 1 or 2 tablespoons of cold water depending on consistency. Allow to cool.
Make your strawberry curd
1. Wash and dry 175g strawberries, then puree strawberries by spreading through a sieve.
2. Melt butter and lemon juice, add in sugar, and stir until melted.
3. Beat 2 eggs in a bowl. Combine with melted butter and sieved strawberries. Heat mixture to boiling point using medium heat, stirring until the mixture thickens slightly.
4. Leave the curd to cool.
Prepare your tartlets
1. Roll out pastry on a work surface which has been sprinkled with flour.
2. Oil 8 tartlet moulds, then place a layer of pastry in each mold and bake in the pre-heated oven at 200°c for 10 minutes. Leave to cool for 10 minutes.
3. Cover each baked pastry base with strawberry curd and refrigerate for approx. 2 hours.
4. Before serving, slice remaining strawberries and decorate each tartlet. Serve with whipped cream.
